
Grappa di Primitivo
Grown, fermented, distilled and bottled to be unique.
Our Grappas are a delicate distillate of grape pomace from our Estate vineyards in Paso Robles. Pomace, or marc, is the grape skins and seeds remaining after grapes have been pressed of their juice or wine. The pomace is rehydrated or fermented into a base wine which is then distilled through our copper hybrid column pot still.
Great care is taken during the distillation to capture the fruit and spice aromas of the Primitivo wine while removing unwanted compounds that are harsh, resulting in a smooth spirit with a peppery finish.
Taste: Star anise, white pepper, and dried strawberry on the nose. The mouth is rich and sweet, but the finish is peppery like the Primitivo wine.
